A Moment That Sparked a Mission

Dr. Michael Selva had owned his ranch in Hondo, Texas for about 15 years when his life took an unexpected turn during a trip to Las Vegas. He was there to celebrate his niece's 21st birthday when his brother treated him to something extraordinary—a Wagyu steak dinner.

That first bite was a revelation. Dr. Selva was completely blown away by the richness, the marbling, the melt-in-your-mouth texture that made every other steak he'd ever had pale in comparison. This was not just beef—this was an experience.

But Wagyu beef is expensive and hard to come by. Rather than accept this as a rare luxury, Dr. Selva had a different idea:

100% Registered Wagyu

Our premium tier features fullblood, registered Wagyu cattle with documented lineage and the highest genetic standards. Complete certification and verified pedigree.

Pure Wagyu

Purebred Wagyu cattle that deliver exceptional marbling and flavor, though not formally registered. Premium quality without the premium registration costs.

F1 - F2 Wagyu Cross

Crossbred (50% - 75% Wagyu) offering a superb balance of Wagyu quality and value. Enhanced tenderness and flavor with accessible pricing.

The ranch's name bridges Dr. Selva's heritage with the Japanese tradition of Wagyu cattle, creating a meaningful connection between two cultures united by a passion for excellence.

Our Breeding & Raising Program

Raising premium Wagyu cattle is a commitment that takes patience, expertise, and nearly three years per animal.

How it Works?

Early Care

Calves are carefully weaned at 6 months old, beginning their journey to becoming premium Wagyu beef.

Building Phase

The cattle are fed on specialized grower feed for one full year, building their frame and foundation.

Refinement

The final year on finisher feed develops the signature marbling that makes Wagyu beef extraordinary.

30 Months!

From birth to processing, each animal receives close to three years of dedicated care and expert nutrition to ensure the highest quality Wagyu beef.

What started as a personal quest to enjoy Wagyu beef has grown into something much bigger. Dr. Selva began with about 15 Wagyu cows, learning the intricate art of raising these remarkable animals on his ranch in Hondo, Texas.

Through dedication, research, and a commitment to quality, the herd has grown to 50 Cows —all born and raised right here on the ranch. Each animal receives the care and attention needed to produce the exceptional beef that first captivated Dr. Selva in Las Vegas.

Now, Dr. Selva wants to share this extraordinary beef with a wider circle, making it affordable and available to more people so they too can have an out-of-this-world tasting experience.
